Preparation steps

Season the roast with salt and pepper. Peel the onions and the garlic and finely chop. Rinse and peel the bell pepper. Grind the bay leaves in the spice grinder or finely in a mortar. Dice the peppers and ham finely and mix with the parsley and finely ground bay leaves. Spread the mixture on the roast, leaving a small border. Roll the roast, pin and tie with kitchen twine.

Preheat the oven to 200°C (approximately 400°F). Mix the oil with pepper and rosemary and sprinkle around the meat. Sear the roast on all sides in a roasting pan, then add the broth and roast uncovered in a preheated oven (middle rack) for about 1 hour. Occasionally baste with the meat juices. Meanwhile, for the garnish, rinse the vegetables, cut into small pieces and season with salt and pepper. Roast the potatoes and carrots in the roaster (place around the meat). Add the remaining vegetables and cook it all for another 20 minutes. To serve, season the vegetables and the meat with the juices. Let the meat rest for a few minutes before slicing.
