1 duck leg (ready to cook, approxiately 2.5 kg or 5.5 pounds)
salt
freshly ground peppers
600 grams Turnip
400 grams shallots
2 Tbsps sugar
200 milliliters dry white wine
2 Tbsps freshly chopped parsley

Preparation steps

1.

Preheat oven to 180°C (approximately 350°F).

Rinse duck and pat dry. Remove excess fat and season inside and out with salt and pepper. Place, breast-side up, in a roasting pan. Roast for about 2 hours. Baste with water throughout.

Peel turnips and cut into wedges. Peel shallot.

Remove duck from oven and skim fat from pan juices.

Heat fat in a pan and cook shallots and turnips until golden brown.

Add sugar and caramelize until golden brown.

Deglaze sauce with wine, cover and simmer for about 15 minutes. Remove the lid and reduce further. Add parsley and season with salt and pepper.

Carve duck and serve with sauce.
