- 4 boneless Guinea fowl breast fillets
- 1 sprig Mugwort
- 150 preservative-free Bacon
- ½ tsp cilantro
- 4 peppercorns
- Sea salt
Preparation steps

Preheat the oven to 160°C (approximately 325°F).

Rinse the breasts, pat dry and with a paring knife, cut a pocket on the thick side, going into but not through the other side. Rinse the mugwort, shake dry, strip the leaves and stuff the leaves into the pockets. Cut the bacon into thin slices and wrap around the breast meat to cover completely. In a mortar, coarsely grind the coriander with the peppercorns, season with salt and rub all over the breasts. Place on a baking sheet and roast 15 minutes. Increase the oven temperature to 200°C(approximately 400°F) and roast 5-10 minutes until cooked through and lightly browned.
