400 grams fresh Peas (or frozen)
125 milliliters dry white wine
750 milliliters Vegetable broth
250 grams Arborio rice
80 grams Parmesan (freshly grated)
2 Tbsps parsley (chopped)

Preparation steps

Peel and finely chop the onion. Melt 30 grams (approximately 2 tablespoons) of butter in a saucepan. Add the onion and sauté until translucent. Stir in the wine and simmer for 5 minutes. Pour in the vegetable stock and bring to a boil. Stir in the rice. Season with salt and pepper to taste. Allow the mixture to simmer until the rice starts to swell, while stirring occasionally, about 15 minutes. Stir in the peas and continue cooking for another 10 minutes.

Add the remaining butter, half the Parmesan and the chopped parsley, and stir to combine.

Divide between plates and serve garnished with the remaining Parmesan.
