Preparation steps

Mix the ricotta with the lemon juice, then season with salt and pepper. Divide the mixture into twenty portions. Rinse the parsley, pat dry, and finely chop.

Insert one olive into each portion of the ricotta cheese, then roll into balls. Roll the balls in the parsley, then arrange on a plate. Serve the ricotta balls with breadsticks.
