- For the brownies
- 3 ½ ozs Dark chocolate (70% cocoa solids)
- ½ cup unsalted butter
- 1 cup light brown sugar
- ½ tsp vanilla extract
- 2 eggs (beaten)
- ⅘ cup all-purpose flour
- 2 Tbsps cocoa powder
- ¾ cup finely chopped Walnut
- For the topping
- 2 ozs plain Chocolate (70% cocoa solids)
- ¼ cup unsalted butter
- 2 Tbsps milk
- 2 Tbsps cocoa powder
- 1 cup powdered sugar
- ½ cup finely chopped Walnut
Preparation steps
1.
For the brownies: heat the oven to 180°C (160° fan) 350°F gas 4. Line a 23cm|9" square tin with non-stick baking paper.

Melt the chocolate and butter in a heatproof bowl over a pan of simmering (not boiling) water. Remove from the heat and stir in the sugar, vanilla and eggs. Beat well until smooth.

Sift in the flour and cocoa and stir until blended, then stir in the walnuts.

Put into the tin, level the surface and bake for about 15 minutes, until just firm to the touch. Cool in the tin.

For the topping: melt the chocolate and butter as before. Remove from the heat and stir in the milk. Sift in the cocoa and icing sugar and beat well until thick and smooth.
6.
Spread the topping over the cooled brownie and sprinkle with walnuts. Leave to set, then cut into squares.
