1.333 cups Amaretto Cookie
½ cup melted butter (to grease the baking frame)
1 cup cooking white chocolate (chopped)
2 cups cream cheese
1 ⅛ cups Sour cream
½ cup sugar
4 eggs
1 Vanilla bean (seeds scrapped out)
For the glaze and the topping
4 sheets gelatin
1.333 cups Strawberries (or cherries)
1 jar Morello cherry (680 g, drained, juice retained)
¼ lemon (juiced)
2 Tbsps sugar (depending on how sweet the fruit is)

Preparation steps

1.
Line a baking tray with greaseproof paper and place a greased baking frame on it.
2.
Crush the amaretti, stir in the butter and transfer to the baking frame, pressing evenly.

Heat the oven to 180°C (160°C in a fan oven), 350°F, gas 4.

Melt the chocolate in a bain-marie and then remove from the heat.
5.
Mix together the cream cheese, sour cream, sugar, eggs and the vanilla seeds until smooth. Stir in the chocolate and transfer the mixture to the baking frame. Bake for around 40 minutes then turn off the oven and leave to rest for another 30 minutes. Remove from the oven and leave to cool.

To make the glaze, soften the gelatine in cold water.

Place the gelatine in a pot and dissolve on a low heat. Stir in the puréed berries, the cherry juice, lemon juice and sugar to taste. Stir in the cherries and remove from the heat.
8.
Top the cake with the cherry mixture and leave to cool. Remove the baking frame and serve the cake on a platter.
