- 2 cups plain flour
- ⅞ cup butter
- ½ cup sugar
- salt
- 2 eggs (beaten)
- 4 cups Coconut flakes
- 3.333 cups Raspberries
- powdered sugar
- 1 ½ cups Coconut shaving
Preparation steps

Mix the flour, butter, sugar, eggs, salt and 100 g flaked coconut to a dough. Wrap in foil or clingfilm and chill in the refrigerator for 1 hour.

Heat the oven to 200C|400F| gas mark 6. Butter a rectangular baking tin.

Roll out the dough between two pieces of clingfilm and line the tin, taking the dough up the sides of the tin.
4.
Scatter the raspberries on the dough and sift over icing sugar to taste. Cover with the remaining coconut flakes and the coconut shavings.
5.
Bake for about 30 minutes until nicely browned. Leave to cool, then cut into rectangles and serve with tea.
