4 Cardamom
3 cloves
½ Cinnamon stick
1 ⅔ cups Basmati rice
1 pinch Saffron
¼ cup raisins
2 Tbsps Lime juice
1 tsp salt
To garnish
4 sprigs parsley

Preparation steps

Heat the ghee and sauté the flaked almonds, cardamom, cloves and cinnamon, stirring. Then sprinkle in the rice and sauté briefly. Add the saffron and a scant 600 ml / 20 fl oz / 2 1/2 cups water. Bring to the boil, cover and cook very gently over a very low heat for about 20 minutes.

Soak the raisins in a little lukewarm water. 5 minutes before the end of cooking time carefully stir the raisins into the rice.

Season to taste with lime juice and salt. Garnish with sprigs of parsley and serve immediately.
