- 1 Tbsp Avocado oil
- 1 onion (finely chopped)
- 2 medium carrots (peeled and diced)
- 1 cup green Lentils
- 5 cups low-sodium vegetable stock
- 1 ⅔ cups extra-firm Tofu (cubed)
- 1 cup vegan noodle (to serve)
- 1 cup curly Kale (finely chopped)
- salt
- freshly ground Black pepper

Preparation steps
1.
Heat the oil in a large saucepan set over a medium heat until hot. Add the onion, carrot, and a pinch of salt, sweating for 5 minutes until softened.
2.
Add the lentils, stir well, and cover with the stock. Bring the liquid to the boil and then simmer steadily for 20 - 25 minutes until the lentils are tender.
3.
Add the tofu and simmer for a further 5 minutes until warmed through. Season to taste.
4.
Ladle into bowls and serve with a garnish of noodle chips and chopped kale on top.
