6 ½ cups small Apple (peeled, halved and cored)
1 lemon (juiced)
cup Rose wine
cup sugar
2 bay leaves
4 cloves
1 Cinnamon stick (broken)

Preparation steps

1.
As soon as you have prepared the apples, place them in a pot of water along with the lemon juice. Once all the apples are done, bring to the boil and cook for one minute. Rinse with cold water, drain and transfer to sterilised preserving jars.

Place the wine, sugar, bay leaves, cloves and the cinnamon stick in a pot with 400 ml water and bring to the boil. Once the sugar has dissolved, pour the liquid over the apples in the jar leaving 1 cm space at the top. Clean the edges and seal tightly.

Place the jars inside a high saucepan lined with a tea towel to prevent the jars from rattling. Fill up with water until the jars are covered and heat slowly to 90°C|194F. Cook for 30 minutes at this constant temperature.
4.
Turn off the heat and carefully remove the jars from the water after 10 minutes. Stand on a tea towel and leave to cool.
