- 4 Apple
- 150 grams Canned cranberry (jarred)
- 1 tsp cornstarch
- 1 tsp sugar
- For the meringue topping
- 1 egg white
- 50 grams powdered sugar
- 2 Tbsps Shredded coconut
Preparation steps

Rinse the apples and slice the upper quarter to make a lid. Remove the core and with a sharp-edged spoon, scoop out some of the apple flesh, leaving a shell about 0.5 cm (about 1/4-inch) thick.

Butter a baking dish and place the apples in it.

Preheat the oven to 180°C (approximately 350°F). In a bowl, stir together the cranberries, cornstarch and sugar and spoon into the apples. Beat the egg whites with the powdered sugar until stiff and fold in the grated coconut. Fill a pastry bag fitted with a rose tip with the cranberry mixture and pipe into the apples. Cover with the apple lid and bake 25-30 minutes. Serve hot.
