- 3 ½ ozs green String bean
- 2 Avocados (peeled, stoned removed and flesh chopped)
- 1 Tbsp lemon juice
- ¼ Frisée (washed and roughly torn)
- 1 handful baby Spinach
- 2 ½ ozs button Mushrooms (sliced)
- 12 cherry Tomatoes
- 1 red Bell pepper (deseeded and cut into fine strips)
- 1 small Beet (peeled and chopped)
- 9 ozs cooked shrimp (peeled)
- 4 Tbsps Thousand Island Salad dressing
Preparation steps
1.
Blanch the beans in boiling water for 3 minutes, drain, refresh under cold water and pat dry. Cut each bean into 3 pieces.

Mix the avocado flesh with the lemon juice to prevent it from becoming brown.
3.
Arrange the lettuce, spinach, mushrooms, tomatoes, bell pepper, beetroot, prawns, beans and avocado in lunch boxes or onto plates, drizzle over the dressing and serve.
