For the Yorkshire pudding batter, put the flour and salt into a mixing bowl. Add the eggs, parsley and milk and mix well. Leave to rest for 20 minutes.

Preheat the oven to 220°C (200 fan), 425°F, gas 7. Peel and roughly dice the onions. Cut the ham into strips. Put the lard into a roasting dish and heat it in the oven.

When the fat is hot, add the sausages, onions and ham and cook in the oven until lightly browned. Take out, pour the batter over the sausages and return to the oven for 30-40 minutes. The pudding should be well risen and crisp on the outside.
