1 kilogram Roasted pork (pork belly or thick pork ribs)

freshly ground peppers
3 Red Bell pepper
2 bay leaves
150 milliliters dry white wine
4 Tbsps olive oil
600 grams waxy potatoes
150 grams Pearl onion (from a jar)

Preparation steps

1.

Season roast with salt and pepper, place into a roasting pan and add 1 cup of hot water. Roast in preheated oven at 220°C (approximately 425°F) for about 30 minutes. Reduce oven temperature to 160°C (approximately 325°F) and roast for another 30 minutes. Add hot water to the pan as needed and baste meat with cooking juices.

Rinse and halve bell peppers, remove seeds and ribs and cut into small pieces.

Peel and rinse potatoes, cut into thin slices. Heat 2 tablespoons of olive oil in a nonstick pan and cook potatoes, few slices at a time, until golden brown. Keep warm.

Heat remaining oil in a pan and saute peppers until soft, season with salt and pepper, Add bay leaf and wine and simmer, covered, for about 8 minutes. Add drained onions and saute briefly. Arrange peppers, onions adn potatoes on plates and top with sliced meat. Serve.
