- 1 ½ cups Broccoli
- 2 Apple (e. g. Boskoop)
- 2 Tbsps lemon juice
- vegetable oil
- 4 cups pork fillets (ready to cook, cut into thin strips)
- 2 cups carrots (cut into long, thin strips)
- ¾ inch fresh ginger (finely grated)
- 1 Tbsp Lime juice
- 1 tsp runny honey
- 14 ozs dried Rice noodles

Preparation steps
1.
Blanch the broccoli in boiling salted water for approx. 5 minutes then quench in cold water and drain well.
2.
Cut the apples into quarters, core and slice into thin wedges. Drizzle immediately with 2 tbsp lemon juice.
3.
Heat 2 tbsp oil in a wok and brown the meat in batches. Remove and put to one side. Add the carrot, ginger and apple to the wok. Add a little extra oil if necessary and fry, stirring occasionally.
4.
Return the meat to the wok, stir through and season with salt, ground black pepper, lime juice and honey.
5.
Cook the noodles in boiling salted water until al dente, drain and divide between bowls. Top with the pork and vegetables and serve immediately.
