Preparation steps

Rinse the meat, pat dry, trim and cut into bite-size cubes. Rinse the peppers, cut in half, remove seeds and cut into small cubes. Peel the onions and chop finely. Cut the pancetta into strips and place in a large, hot pot. Add the meat and sear, stir in tomato paste and onions, cook briefly then pour in the broth.

Add the spices, season with salt, pepper and paprika and simmer over medium heat for 1 1/2 hours. Brown the chorizo in a pan. Remove, cut into slices and add to the stew along with the diced peppers 15 minutes before the end of cooking time. Season the stew and serve garnished with freshly chopped parsley leaves.
