- 200 grams Chorizo
- 1 onion
- 2 garlic cloves
- 2 Tbsps olive oil
- 700 grams large white Beans (canned)
- 400 grams chopped Tomatoes (from a jar or Tetrapak)
- 150 milliliters Vegetable broth
- salt
- peppers
- 1 tsp dried oregano
- 3 Tbsps black pitted Olives
- 2 Tbsps chopped parsley

Preparation steps
1.
Slice chorizo; then cut into large strips.
2.
Peel and finely chop onion and garlic cloves.
3.
Heat oil in a pan. Add onion, garlic, and chorizo and sauté 1-2 minutes.
4.
Add white beans, chopped tomatoes and broth. Season with salt, pepper and oregano and simmer over medium heat, stirring occasionally, about 15 minutes.
5.
Finally, stir in olives. Divide beans among bowls and serve sprinkled with parsley.
