- For the pork chops
- 2 Pork cutlets
- 2 Tbsps Lard
- salt
- freshly ground peppers
- For the red cabbage
- 1 Red cabbage (1 kg)
- 2 Apple
- 1 onion
- 2 Tbsps Lard
- 100 milliliters Red wine vinegar
- salt
- peppers
- 1 tsp sugar
- ¼ tsp ground cloves
- 2 potatoes
- For the garnishes
- 1 lemon (for each serving)
- 1 Tbsp Horseradish cream (for each serving)
- 1 Tbsp lingonberry (for each serving)
- white bread

Preparation steps

For the red cabbage, trim the cabbage, remove outer leaves and cut into strips. Peel, core and dice the apples. Peel onion and finely dice. Heat lard in a saucepan, add cabbage and onion and sauté until soft. Add vinegar and 100 ml (approximately 1/4 cup plus 2 tablespoons) of water. Add apples and spices. Peel potatoes, grate finely and add to the cabbage. Simmer cabbage for 40-50 minutes.

For the pork chops, season pork with salt and pepper and fry in lard for about 3 minutes on each side.

Arrange cabbage on plates with pork chops and white bread and garnish with lemon slices, horseradish cream and lingonberries.

Serve with a pilsner beer, if desired.
