250 grams chopped Walnut
225 grams Pastry flour
150 grams powdered sugar
120 milliliters vegetable oil
1 tsp Baking powder
½ tsp ground ginger
1 egg
1 egg yolk
juice of lemons
1 pinch salt
For the streusel
150 grams Pastry flour
75 grams sugar
1 egg yolk
75 grams butter
1 generous pinch cinnamon

Preparation steps

Peel and quarter the pears lengthwise, cut out cores, then cut into small pieces, mix with lemon juice immediately.

In a bowl, stir together the flour, baking powder, salt and ginger.

Preheat the oven to 200°C (approximately 390°F). Butter a 9-inch springform pan. In a second bowl, stir together the oil, sugar and egg yolk and beat until creamy. Mix in the flour mixture, then fold in the nuts and pear pieces and place in the springform pan.

For the Streusel: Combine all ingredients in a bowl and with your fingers, knead into coarse crumbs and sprinkle over the cake.

Bake until a wooden pick inserted near the center of the cake comes out clean, about 1 hour. Cool in the pan for 15 minutes, then run a metal spatula around the edge and center of the cake and invert onto a wire rack to cool completely.
