Peanut Cookies with Vanilla Sugar
Mix flour with ground nuts. Whisk butter with sugar and peanut butter until creamy. Add egg and whisk well, combine with flour mixture and mix to a smooth pastry. Shape into small balls (1.5-2 cm) (approximately 1/2-3/4 inch) and arrange on a baking sheet. Top each with a half of a peanut. Bake in preheated oven at 160°C (approximately 325°F) for about 15-20 minutes.
Remove from the oven and roll while still warm in vanilla sugar. Cool and serve.
