- 4 Tomatoes
- 400 grams Spaghetti
- salt
- peppers
- 2 Tbsps butter
- 2 sprigs fresh thyme (substitute 1/2 teaspoon dried thyme)
- 2 Tbsps breadcrumbs
- 3 Tbsps black Olive paste (from the delicatessen)
- ½ bunch Basil
- 4 freshly grated Parmesan

Preparation steps

Carve tomatoes crosswise, scald briefly in a pot of boiling water, drain, rinse with cold water and peel. Cut tomatoes into quarters, remove stem and seeds and cut into cubes. Cook spaghetti in a pot with plenty of boiling salted water until al dente. Meanwhile, for the sauce, heat butter in a pan.

Rinse thyme, shake dry, strip leaves from the branches. Add tomatoes and thyme to the pan and cook over low heat for about 5 minutes. Add bread crumbs and olive paste, mix, cook while stirring for 5 minutes and lightly season with salt and pepper. Arrange spaghetti on plates, cover with tomato sauce and serve.
