4 Pork sausage (total 500 grams)
1 Fennel bulb
2 shallots
300 grams Broccoli
salt
2 Tbsps olive oil
100 milliliters dry white wine
400 grams Spaghetti
freshly ground peppers
40 grams freshly grated Parmesan

Preparation steps

1.

Cut the sausages into 3 cm (approximately 1 inch) long slices. Trim fennel, rinse the bulb and quarter lengthwise and thinly slice. Peel the shallots and cut into thin wedges. Rinse the broccoli and chop into small pieces. Blanche broccoli pieces in boiling salted water for about 2 minutes. Drain and let cool.

Brown the sausages on all sides in a hot skillet with oil for about 4 minutes. Remove and set aside.

Cook the pasta in boiling salted water until al dente.

Saute the shallots with the fennel and broccoli in the drippings and pour in the wine. Simmer for about 5 minutes over medium heat.

Drain the pasta, and add to the pan with sausages, 2-3 tablespoons of the pasta water, and the vegetables. Season to taste with salt and pepper. Arrange in shallow bowls and top with more Parmesan. Serve hot.
