500 grams Linguine
salt
150 grams crayfish (natural, ready to cook, peeled and cooked)
200 grams Cherry tomatoes
½ stalk Leeks
1 handful parsley
1 red chili pepper
1 fresh Lime
1 garlic clove
2 Tbsps olive oil
1 splash Shellfish broth
freshly ground peppers
40 grams freshly grated Parmesan

Preparation steps

Cook linguine in boiling salted water until al dente.

Rinse and dry crayfish. Rinse and halve tomatoes. Rinse and dry leek, cut into strips. Rinse parsley, shake dry, pluck off leaves and chop coarsely. Rinse and halve chile peppers, remove seeds and chop. Rinse lime in hot water and dry, grate zest and squeeze juice. Peel garlic and chop finely. Heat oil in a pan and saute garlic with leek and chile peppers for 2-3 minutes. Add tomatoes and lime zest and saute for 1-2 minutes. Deglaze pan with fish stock and add crayfish. Season with lime juice, salt and pepper. Add drained pasta and toss well.

Arrange on plates and sprinkle with Parmesan. Serve.
