- ½ cup olive oil
- 3 large Eggplant (sliced)
- 2 onions (finely chopped)
- 3 cloves garlic cloves (crushed)
- 1 chopped thyme
- 1 Tbsp chopped oregano
- 1 Tbsp chopped rosemary
- 2 ¼ cups Ricotta cheese
- 2 eggs (beaten)
- 1 cup Parmesan (grated)

Preparation steps

Heat the oven to 200ºC (180º fan) 400ºF, gas 6. Brush the aubergine slices with oil and cook on a griddle pan or frying pan for about 5 minutes or until lightly browned then set aside.

Heat the rest of the oil in a frying pan and cook the onions until soft. Add the garlic and herbs, season with salt and pepper and cook for 2 more minutes. Layer the aubergines and onions in an ovenproof dish.
3.
Beat the ricotta with the eggs and parmesan and spread over the top of the dish. Bake for 20 - 30 minutes or until nicely browned then serve garnished with the oregano leaves.
