- 500 grams turkey breasts
- 1 onion
- 1 garlic clove
- 1 Tbsp butter
- 1 bunch Arugula
- 250 grams Whipped cream
- 200 milliliters white wine
- 100 milliliters vegetable stock (or chicken stock/broth)
- 3 centiliters balsamic vinegar
- salt
- peppers
- 50 grams Pine nuts
- 400 grams Tagliatelle
Preparation steps
1.
Peel and mince onions and garlic.
2.
Rinse arugula, drain and chop.
3.
Toast pine nuts in a dry pan.
4.
Boil pappardelle in salted water until al dente.
5.
Cut turkey breast into bite-sized pieces and season with salt and pepper. Heat a little oil in a pan and cook turkey, stirring constantly for 3 to 4 minutes. Remove from pan and keep warm.

Add butter to pan. Cook onion and garlic until soft. Deglaze with white wine, broth, cream and balsamic vinegar. Reduce and thicken.
7.
Return turkey to sauce, stir in arugula and season again. Plate noodles and serve drizzled with sauce and turkey. Garnish with pine nuts.
