½ cube fresh Yeast (approximately 21 grams or .7 ounces)
350 grams Pastry flour
salt
Pastry flour (for kneading)
200 grams Sour cream
2 egg yolks
freshly ground peppers
250 grams smoked Pancetta
3 scallions
3 small, red onions
1 Tbsp freshly chopped thyme

Preparation steps

1.

Dissolve yeast in approximately 175 ml (approximately 3/4 cup) of lukewarm water. Combine yeast water, flour and 1 teaspoon salt and knead into a dough. Cover and leave in a warm place for about 30 minutes.

Preheat the oven to 220°C (approximately 425°F). Line 2 baking sheets with parchment paper.

Knead dough on a floured surface. Divide into 4 portions and roll out each into a large pancake. Place dough on a baking sheet.

Combine sour cream and egg yolks. Season with a little salt and pepper. Spread mixture onto dough, leaving a narrow margin around the edges.

Dice pancetta. Rinse and slice scallions. Peel and thinly slice onions. Sprinkle pancetta, scallions and onions into dough. Bake until golden brown, about 10-15 minutes.

Remove from oven, season with pepper and thyme, slice and serve.
