100 grams sugar
500 milliliters milk

1 sprig mint
Maple syrup (for drizzling)

Preparation steps

Rinse lemon in hot water, wipe dry and grate peel into a long zest. Squeeze juice out of lemon into a cup. Preheat the oven to 80°C (approximately 175°F). Separate eggs and beat egg yolks  in a bowl, add flour, baking powder, sugar, milk and 1 tablespoon lemon juice. Beat egg whites with a pinch of salt until stiff and fold into the batter.

In a pan, melt butter, add a small amount of batter to the pan and cook for 2-3 minutes until golden brown. Turn the pancake over using a spatula and bake 2-3 minutes again. Remove pancake from pan and keep warm in a preheated oven. Cook remaining batter similarly until batter is completely used.

Rinse mint, shake dry and cut leaves into thin strips. Mix mint with lemon zest. Serve pancakes on a plate, drizzle with maple syrup and, if desired, with melted butter. Serve garnished with lemon zest and mint.
