Paella with Chicken

- 3 garlic cloves
- 4 onions
- 1 Red Bell pepper
- 200 grams Peas
- 150 grams Bacon
- 100 milliliters dry white wine
- 3 Tbsps olive oil
- 4 Chicken thigh
- salt
- freshly ground pepper
- 250 grams Basmati rice
- 1 can Saffron
- 500 milliliters chicken stock
Preparation steps
Peel garlic and onions and finely chop. Rinse bell pepper, cut into quarters, remove seeds and ribs and dice.
Rinse chicken legs, pat dry, trim and season with salt and pepper. Heat oil in a paella pan or large ovenproof skillet and fry chicken on all sides. Bake in a preheated oven 190°C (approximately 400°F) for about 10 minutes.
Remove the pan and put back on the stove. Add diced bacon, garlic and onion and saute while stirring over medium heat. Then add bell pepper, peas and rice and sprinkle with saffron, briefly saute everything while stirring.
Deglaze the pan with white wine and poultry stock and season with salt and pepper. Cook in the preheated oven again for approximately 25 minutes. Stir occasionally. Add some stock or water if needed and season to taste. Serve in the pan.
