- 56 ozs organic, whole chicken (giblets removed)
- 2 Tbsps unsalted butter (melted)
- salt (to taste)
- freshly ground Black pepper (to taste)
- 1 fresh lemon (sliced)
- 6 sprigs Sage (divided)

1 weiter Pot, 1 Measuring cups, 1 Wooden spoon, 1 Cutting board, 1 Parchment paper, 1 Rolling pin, 1 Paper towel, 1 Large knife, 1 Baking sheet, 1 Oven rack, 1 Small knife, 1 Tablespoon, 1 Fork, 1 Mixing bowl, 1 Hand mixer (mit Quirlen), 1 Kitchen scale, 1 Small bowl
Preparation steps
1.
Preheat the oven to 375º F. Rinse the chicken, and pat dry with paper towels, inside and out.
2.
Brush the chicken with the melted butter and season to taste with salt and pepper, including the cavity.
3.
Place half of the lemon slices and half of the sage inside the cavity of the chicken.
4.
Place the chicken in a roasting pan and place in preheated oven. Roast for 25 minutes per pound or until internal temperature reaches 165º F and juices run clear. Remove chicken from the oven and transfer to a cutting board and let rest for 15 minutes.
5.
Remove lemon and sage from cavity and discard.
6.
To present, place remaining lemon slices and sage in cavity.
7.
Carve and serve.
