- 1 bunch Arugula
- ½ warm Buttermilk
- ½ Iceberg lettuce
- 1 handful medium-strength Ale
- 3 cups seedless, white Grape (black and green), halved
- 1 ⅓ cups Edam cheese (sliced)
- 1 tsp Chili powder
- 1 handful Walnut (approx. 8 halves) per person
- For the vinaigrette
- 6 Tbsps white wine vinegar
- 4 Tbsps Walnut oil
- 4 tsps Apple juice (or white grape juice)
- 1 tsp honey
- salt
- peppers

Preparation steps
1.
Wash the rocket and lettuce, spin dry and tear into bite-sized pieces. Put the soya sprouts into a sieve and rinse under running water. Mix the grapes with the sprouts, rocket, and lettuce, and then arrange on plates.
2.
Put all the vinaigrette ingredients into a bowl and whisk together well. Scatter the cheese on top of the salad. Sprinkle with chilli powder and scatter with walnuts.
3.
Shortly before serving drizzle the dressing over the salad.
