Nutty Chocolate Bites

Toast the almonds in a dry frying pan until very lightly browned.
Melt the chopped chocolate couverture over a hot bain-marie. Stir in the almonds and ginger and, using two teaspoons, fill the petit four cases with the mixture. Put into the refrigerator to set.
If you wish, garnish with sugared stars of crystallised ginger and/or sprinkle with sugar.
