4 ½ ozs plain Sugar-free dark chocolate (melted)
0.333 cup butter
¾ cup xylitol
2 tsps Baking powder
1 pinch salt
2 eggs
½ tsp Almond extract
2 cups all-purpose flour (plus extra for dusting)
1 cup chopped almonds
1 ½ tsps finely grated Orange zest

Preparation steps

1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Line 2 large baking trays with non-stick baking paper.

Beat the butter in a mixing bowl until creamy. Add the xylitol, baking powder and salt and beat until blended.

Beat in the eggs and almond extract until combined. Stir in the flour and mix to a dough.

Divide the dough in half and place one half in another bowl.
5.
Stir the melted chocolate and half the almonds into one half of the dough.
6.
Stir the orange zest and remaining almonds into the other half.
7.
Divide each half into 4 equal pieces.
8.
Using lightly floured hands, shape each piece into a 3cm x 25cm|1 1/2" X 10" rope.

Place a rope of each colour side by side on one of the baking trays.

Twist the ropes around each other several times and flatten slightly to make a 5cm|2" wide log.
11.
Repeat with the other ropes, placing the logs about 10cm|4" apart on the baking trays.
12.
Bake for 25 minutes, until firm to the touch, then leave to cool for 15 minutes.
13.
Reduce the oven temperature to 150°C (130° fan) 300°F gas 2.
14.
Cut each log into 12 slices with a serrated knife. Space the biscuits slightly apart and return to the oven for about 20 minutes until lightly golden, dry and crisp. Cool on the baking trays for a few minutes, then place on a wire rack to cool completely.
