- ½ cup butter (diced)
- 2 ½ ozs Dark chocolate (60% cocoa solids chopped)
- 1 ½ Tbsps instant Espresso powder
- ¾ cup sugar
- ¾ cup dark brown sugar
- 2 eggs (beaten)
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- ⅓ cup cocoa powder
- ½ tsp Baking powder
- ¼ tsp salt
- 1 cup Walnut (plus extra for sprinkling)

Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Line 2 large baking trays with non-stick baking paper.
2.
Melt the butter and chocolate in a large heatproof bowl over a pan of simmering (not boiling) water. Remove from the heat and stir in the espresso powder. Cool slightly.
3.
Stir in the sugars, eggs and vanilla until smooth.

Sift the flour, cocoa, baking powder and salt into a mixing bowl. Make a well in the middle and stir in the chocolate mixture. Gently stir in the walnuts.
5.
Drop rounded tablespoons of mixture, apart, onto the baking trays. Sprinkle the tops with walnuts.
6.
Bake for 10 minutes. The cookies will be soft in the centre, but crisp around the edges. Cool on the trays for 2 minutes, then place on a wire rack to cool completely.
