- 12 large mussels
- 2 shallots
- 100 milliliters dry white wine
- 1 thyme
- 1 garlic clove
- 1 Beefsteak tomato
- 3 shallots
- 2 Tbsps scallions
- 1 Tbsp Red wine vinegar
- 1 tsp balsamic vinegar
- salt
- freshly ground peppers
- 3 Tbsps olive oil

Preparation steps

Rinse the mussels thoroughly. Peel 2 shallots, finely chop and cook briefly with wine, thyme and garlic in a pot. Add the mussels, cover and cook for about 5 minutes, shaking occasionally until the shells have opened. Remove from the pot, remove the mussel meat from the shells and arrange in 12 shell halves on a plate.

Blanch the tomatoes for a few seconds, drain, peel, quarter, core and dice finely. Peel the remaining shallots and also chop very finely. Mix with chives. Whisk together the vinegar and oil, season with salt and pepper and fold into the tomato mixture. Spread over the mussels and serve.
