3 scallions

1 fresh red chili pepper
3 Tbsps olive oil
125 milliliters dry white wine
2 sprigs thyme
2 sprigs fresh Basil
2 sprigs fresh parsley

Preparation steps

1.

Rinse the scallions and cut into rings. Rinse the chile peppers and cut into rings. Peel the garlic and cut into thin slices.

Rinse the mussels under running water. Cover and cook with the scallions, peppers, garlic and wine for 15 minutes until the shells open. Throw away any unopened shells. Pluck the basil and parsley leaves from the stems and stir into the mussels with the thyme. Cover and cook for 1-2 minutes. Season with salt and pepper. Goes well with lemon wedges.
