¾ cup caster sugar
¼ tsp ground Cardamom

For the fondants
1 Tbsp cocoa powder (for dusting)
½ cup butter (plus extra for greasing)
5 ozs plain Dark chocolate
1 cup caster sugar
½ tsp vanilla extract
2 large eggs (beaten)
1 cup all-purpose flour

Preparation steps

To make the ice cream put the milk, sugar, cardamom and cream into a pan. Heat gently, stirring until the sugar has dissolved. Put aside to infuse for 1 hour.

Whisk the yogurt into the cardamom cream mixture and churn in an ice cream maker. When ready spoon into a plastic container and freeze.

To make the chocolate fondants heat the oven to 180°C/160°C fan/350°F/gas 4. Brush four individual metal pudding bowls, or ramekins, with melted butter. Dust with cocoa powder and shake out the excess.

Melt the chocolate and butter gently in a saucepan. Remove from the heat and stir in the sugar and vanilla. Leave to cool.

Whisk the eggs into the mixture a little at a time and then fold in the flour. Pour the mixture into the pudding bowls, filling two-thirds full. Place on a baking tray in the middle of the oven and bake for 12 minutes. Remove from the oven and run a knife around the edge, turn out onto a plate. Serve at once with the yogurt ice cream.
