cup unsalted butter
5 ozs plain Dark chocolate (70% cocoa solids)
3 eggs
3 egg yolks
cup light brown sugar
1 cup all-purpose flour (heaped)
2 Tbsps cocoa powder
12 Toffee

Preparation steps

1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Butter 6 small 150ml|2/3 cup pudding basins and dust with cocoa powder, shaking out the excess.

Melt the butter and chocolate in a heatproof bowl set over a pan of simmering water.

Whisk together the eggs, egg yolks and sugar until pale and thick.
4.
Fold in the chocolate mixture, then sift in the flour and cocoa until blended.
5.
Divide between the basins, filling each 3/4 full.
6.
Press two toffees together and submerge each in a pudding, making sure they are covered.
7.
Bake for 10-12 minutes until the tops are firm to touch but the middles still feel soft. Leave to rest for 30 seconds before removing from the basins.
