- ¾ cup boiling water
- 1 tsp baking soda
- 1 cup chopped, pitted Date
- ½ cup butter
- ½ cup light brown sugar
- 1 egg (beaten)
- 2 ¼ cups all-purpose flour
- 4 Tbsps Sugar crystal

Preparation steps
1.
Heat the oven to 170°C (150° fan) 300°F gas 3. Grease a loaf tin.
2.
Mix the boiling water with the bicarbonate of soda and pour over the dates.
3.
Beat the butter and sugar in a mixing bowl until light and fluffy. Gradually beat in the egg until well mixed.
4.
Stir in the flour and sugar crystals. Add the dates and the liquid and stir together well.
5.
Spoon into the loaf tin and bake for about 1 hour. Insert a skewer into the centre of the cake, it will come out clean when the loaf is cooked. Cool in the tin, then turn out onto a wire rack to cool completely.
