Mixed Nut Bread

Sprinkle the yeast and salt onto the flour. Mix in 300 ml/1 1/4 cups lukewarm water. Add the macadamia nuts (reserving 2 tbsp), chestnut flour and oil and knead to a smooth dough. Shape the dough to a ball, cover with a damp cloth and let rise for 3 hours in a warm place.
Knead the dough again briefly. Brush the loaf pan with oil and sprinkle with flour. Fill in the dough and smooth the surface. Cover again and let rise in a warm place for 30 minutes.
Heat the oven to 220C (200C fan) 425F, gas 7.
Place an oven-proof bowl of boiling water in the oven. Put in the bread and bake for approx. 50 minutes. Take out, brush with a little water and sprinkle on the reserved macadamia nuts. Return the loaf to the oven and bake for a further 10 minutes.
Turn the bread out onto a wire rack and let cool completely.
