- For the cupcakes
- 1 ¾ cups all-purpose flour
- 2 ½ tsps Baking powder
- ½ cup sugar
- ¼ tsp salt
- ¾ cup chopped, mixed Nut
- ¾ cup milk
- ⅜ cup sunflower oil
- 1 egg
- For the topping
- ¾ cup unsalted butter
- 3 ½ cups powdered sugar
- 1 cup Mascarpone
- 1 cup chopped, mixed Nut

Preparation steps
1.
For the cupcakes: heat the oven to 200°C (180° fan) 400°F gas 6. Place paper cases in a 12 hole muffin tin.
2.
Mix the flour, baking powder and sugar in a mixing bowl.
3.
Whisk together the milk, oil and egg. Stir into the dry ingredients with the nuts until just combined. The mixture will be lumpy.
4.
Spoon into the paper cases and bake for about 20 minutes, until golden and risen. Cool in the tin for 5 minutes, then place on a wire rack to cool completely.
5.
For the topping: beat the butter until soft, then sift in the icing sugar.
6.
Gradually beat in the mascarpone until smooth and creamy, then stir in the nuts.
7.
Spread the mascarpone cream on top of each cake
