- Coppa and avocado
- 4 finger Rolls
- 2 Tbsps butter (softened)
- 12 slices Coppa
- 1 Avocado (peeled, stoned and sliced)
- Goat’s cheese and tomato
- 4 finger Rolls
- 2 Tbsps butter (softened)
- ⅔ cup soft Goat cheese
- ⅓ cup Tomatoes (chopped)
- 1 handful Arugula
- Cucumber and chilli jam
- 4 finger Rolls
- 6 Tbsps Pepper Jelly
- 3 Tbsps sliced almonds (toasted)
- ¼ Cucumber (peeled and sliced)

Serve the rolls immediately to prevent the avocado going black.
Preparation steps
1.
Cut all of the rolls in half horizontally without cutting all the way through one side, then spread the insides with butter.
2.
Stuff four of the rolls with coppa and avocado and season with a little sea salt and black pepper.
3.
Mix the goat’s cheese with the sun-blush tomatoes and rocket and fill four more of the rolls.
4.
Mix the chilli jam with the flaked almonds and spread the mixture over the inside of the final rolls/ Lay a row of cucumber slices down the middle before closing.
