- 4 cups mixed Berry (e. g. raspberries, blackberries)
- ½ cup sugar
- 1 cup Red currant juice
- 2 Tbsps Corn starch
- 8 slices white Bread (ready-sliced)

Preparation steps
1.
Put half the berries in a pan and sprinkle over the sugar. Pour over the juice and heat. Simmer for a few minutes, then press through a sieve and bring to the boil again.

Mix the cornflour with a little cold water, add the fruit purée and bring to the boil. Carefully stir in the remaining fruit, bring to the boil again and remove from the heat.

Cut the crusts off the bread and slice into fingers. Line a pudding bowl (approx. 14 cm diameter) with the bread. Spoon the berry mixture into the bowl and cover with the remaining bread so that the filling is completely enclosed. Weigh down with a plate or bowl and chill for at least 4 hours.
4.
Before serving, turn out of the bowl and arrange on a plate. Serve garnished with berries if desired.
