- 4 cups fresh peas (blanched)
- 1 Tbsp Red onions (finely sliced)
- 1 Tbsp lemon zest
- 2 Tbsps lemon juice
- kosher salt (to taste)
- ¼ cup mint
- 1 cup Ricotta cheese

Preparation steps
1.
In a mixing bowl, add peas, onion and lemon zest. Pour lemon juice over peas, season with salt and toss well to coat. Spoon into individual serving dishes. Dollop some cheese onto each serving and top with mint leaves. Serve at room temperature.
