- 80 grams ground Pistachio
- 100 grams Parmesan
- 3 large, thin Turkey cutlets (200 g each)

- 6 Roulade pins
- 1 egg
- 2 Tbsps vegetable oil
- 18 Wooden skewers

Preparation steps
1.
Plane the Parmesan into thin slices with a vegetable peeler.
2.
Flatten the turkey cutlets and season with salt and pepper. Spread with about 1/3 of the pistachio and cover with cheese slices. Roll the turkey up and pin closed with roulade skewers.

Beat the egg in a deep bowl. Add the remaining pistachios to a second bowl. Dip the turkey rolls firstly in the egg and then turn in the pistachios.
4.
Fry the rolls on all sides in some oil (not too hot). Then put the lid on the pan and cook for about 30 minutes over low heat.
5.
Remove the finished turkey rolls from the pan and allow to cool briefly. Remove the roulade skewers and cut the rolls diagonally into triangles. Insert a wooden skewer into each and serve arranged on a plate.
