- 200 grams Crabmeat
- 1 shallot
- 1 Tbsp butter
- 1 Tbsp Pastry flour
- 150 milliliters milk
- 150 grams Whipped cream
- salt
- freshly ground peppers
- Worcestershire sauce
- lemon juice
- 2 Tbsps dry sherry
- 1 Tbsp chopped Dill
- 12 small Vol-au-vent (Finished product)

Preparation steps

Peel and finely chop shallot. Sauté in butter. Stir in flour. Add milk and heavy cream while whisking vigorously. Add Worcestershire sauce, lemon juice and Sherry. Season with salt and pepper. Add crab meat and cook for about 3 minutes over low heat. Add chopped dill. Remove from heat.

Place the puff pastry on a baking sheet and bake in preheated oven (180 °; middle rack) for approx 6-8 minutes.

Place the pastries on warmed plates, fill with crab ragout and serve immediately.
