- For the dough
- 3 cups all-purpose flour (plus extra for dusting)
- 1 tsp baking soda
- 2 Tbsps ground ginger
- 1 Tbsp ground cinnamon
- ½ tsp ground cloves
- ½ cup butter
- ¾ cup light brown sugar
- 4 Tbsps light corn syrup (warmed)
- 1 egg
- For the icing
- 2 cups powdered sugar
- ½ tsp lemon juice
- water

Preparation steps
1.
For the dough: heat the oven to 190°C (170° fan) 375°F gas 5. Line 2 large baking trays with non-stick baking paper.
2.
Sift the flour, bicarbonate of soda and spices into a mixing bowl. rub in the butter until the mixture resembles breadcrumbs.
3.
Stir in the sugar. Add the syrup and egg and beat well to a soft dough. Knead until smooth.
4.
Roll out the dough on a floured surface about 5mm|1/4" thick and cut out house shapes with a cutter or card template.

Place on the baking trays and bake for 8-10 minutes until golden brown. Cool on the trays for 10 minutes then place on a wire rack to cool completely.
6.
For the icing: sift the royal icing sugar into a bowl and beat in the lemon juice and just enough water to give a thick consistency. The mixture should be thick enough to coat the back of a spoon.
7.
Spoon the icing into a piping bag and pipe details on the gingerbreads, as in the photo. Leave to set.
