- 1 ½ cups all-purpose flour
- ⅓ cup caster sugar
- 1 cup butter (cubed)
- 14 ozs canned condensed milk
- ½ cup dark, soft brown sugar
- 2 Tbsps light corn syrup
- 7 ozs plain Dark chocolate (chopped)

Preparation steps
1.
Put the flour, sugar and 125g of the butter into a food processor and blend until the mixture resembles breadcrumbs. Press the mixture into an 18cm shallow square cake tin. Prick with a fork and chill for 20 minutes.

Heat the oven to 180°C/160°C fan/350°F/gas 4. Bake the shortbread for 20 minutes until just beginning to turn golden brown. Cool in the tin.

In a pan heat the condensed milk, brown sugar, syrup and remaining 100g of butter. Bring to the boil, stirring continuously. Boil for 6–8 minutes, stirring frequently, until thickened. Pour the caramel onto the shortbread and leave to cool for 30 minutes.

Melt the chocolate in a a microwave or in a bowl over a pan of hot, but not boiling water. Pour on top of the caramel and spread evenly. Leave to set. Cut into squares to serve.
