- 500 milliliters Vegetable broth
- 250 grams Millet
- purple and green Grape 300 grams (approximately 11 ounces)
- 250 grams Gruyere
- 1 bunch scallions
- 75 milliliters olive oil
- 50 milliliters balsamic vinegar
- 2 Tbsps lemon juice
- salt
- freshly ground peppers
- ½ tsp ground cilantro

Preparation steps

Bring the vegetable broth to a boil in a large pot. Add the millet, reduce the heat to low, cover and simmer for 15 minutes.

Rinse, halve and remove the seeds from the grapes. Cut the Gruyère into 1 cm (approximately 3/8 inch) cubes. Rinse the scallions and slice thinly. Transfer the cooked millet to a large bowl and mix with the olive oil, balsamic vinegar, lemon juice, grapes, cheese and scallions. Season with salt, pepper and coriander. Cover and refrigerate for about 1 hour before serving.
