150 grams soft butter
150 grams sugar
1 pinch salt
2 eggs
2 sprigs Woodruff
200 grams Pastry flour
1 tsp Matcha
1 tsp Baking powder
2 Tbsps milk
For the topping
100 grams Mascarpone
2 Tbsps Vanilla sugar
2 Tbsps milk
1 tsp Matcha
1 egg yolk

Preparation steps

Preheat oven to 180°C (approximately 350°F). Grease ramekins well with butter and sprinkle with flour.

For the cakes, beat butter, sugar and salt until creamy and gradually add eggs. Rinse woodruff, shake dry, pluck leaves and chop finely. Mix flour, matcha, baking soda and sweet woodruff. Add flour mixture to butter mixture alternately with milk and stir until smooth. Fill ramekins about 2/3 full with batter and bake 20-25 minutes. Cakes will fall as they cool. Place cakes on a baking sheet lined with parchment paper.

For the filling, stir mascarpone, vanilla sugar, milk, egg yolks and matcha until smooth. Spoon filling into cake tops, cover pan with parchment paper and bake 10 minutes. Garnish as desired to serve.
